Rathfinny & Big Green Egg
A sparkling summer of wine and food
Located on the rolling slopes of the South Downs, the Rathfinny Wine Estate’s setting is almost as big a draw as its magnificent Sussex sparkling wines. Great food produced from local, seasonal ingredients is another important part of the winery’s offering – and Big Green Eggs play a prominent role. This summer, as well as being used to create the seasonal menus at the Tasting Room restaurant and Flint Barns dining room, the estate’s EGGs are being fired up for a series of special alfresco events that make the most of Rathfinny’s beautiful environment and spectacular wine pairings.
Recipe by head chef Chris Bailey
For an Easter treat, Rathfinny head chef Chris Bailey has conjured up this playful recipe for a deep, dark, gooey-centred dessert with a lick of woodsmoke and a creamy chocolate sauce.
